Meet the Pit Master

Aqualita Brown

Woman Pit Master
"Doing What I Do"

Hello Folks my name is Aqualita Brown and I am originally from North Louisiana. I relocated here in 2001 after completing my time in the U.S. Navy from 1992. Having resided here for some time, I notice the scarcity of down-home cooking, specifically smoked meats, which is what a lot of folks call BBQ.

Whatever your choice of words, I can assure you, you will enjoy my family heritage. I prepare all of our smoked meats with woods commonly used back home. PECAN. I also don't use any charcoal, brines, injections or liquid smoke. Smokin meat is a passion I sincerely enjoy as well as studying various parings of what goes best with it.

In my home and upbringings the meat set the tone and it was important to know where it came from and the life of the animal, which is what I look for as well.

My Louisiana meals will be made honoring my grandmothers and mother whom both still reside back home. So believe me they will be watching.
